Build a Vegan Bowl at Koshary by Misteka

Unless you’ve had the opportunity to travel around the globe, you’ve probably never tried Egyptian street food. Lucky for you, the chef at Koshary by Misteka made the executive decision to bring exactly that type of fare to your neck of the woods a few months ago. The eatery is named for its signature dish—and the national dish of Egypt—the koshary.

It’s a grain bowl loaded with protein-rich vegan ingredients, and you can enjoy it a few different ways. In order to build your own koshary, you’ll have to choose a base of white rice, brown rice, or quinoa first. Next, opt in or out of lentils and gluten-free pasta on to. Then load on any final flourishes you like, including a house-made salsa, chickpeas, fried onions, and dukkah, an Egyptian condiment. You can also add falafel for an extra boost of protein. If you’d like some greens in your meal, opt for a salad of lettuce and arugula with a colorful array of fixings and falafel on top.
